COLORS OF INDIA – One bowl chocolate cake

In this simple and easy Chocolate Cake recipe,I celebrate the Tricolor.

I stress on easy because it’s a One Bowl Cake recipe.Moist and Light,this is a great cake to enjoy with a generous sprinkle of icing sugar or lavishly layered with the Dark Fudge Frosting.

THE RECIPE:

ONE BOWL CHOCOLATE CAKE WITH DARK FUDGE FROSTING

Ingredients

2 1/2 cups plain flour

1 1/2 cups cocoa

2 1/2 cups caster sugar

2 1/2 tsp baking powder

1 1/4 tsp baking soda

3 eggs

1/2 cup vegetable oil

1 1/4 cup milk

1 1/4 cups warm water

1 1/4 tsp vanilla extract

1 tsp instant coffee powder

Method:

In a stand mixer bowl add sieved flour and cocoa.

Mix in all the powders

Add caster sugar,baking powder,baking soda and stir  on low-speed for 30 seconds.

Next add eggs,oil,extract vanilla,coffee powder, milk and warm water.

Add all the liquids

Mix batter on low-speed for 3 minutes.

The mixture will be quite liquid.

Pour cake batter in a 9 inch round greased and lined tin for a layered cake or a 10 x 10 inch square tin for a sheet cake.

Bake at 175 C degrees for 30 to 35 minutes for 9″ cake and 20 to 25 minutes for 10 × 10″ cake.

Cool on a wire rack.Use as required.

Net weight of  baked cake: 1 kg

Serves:12 people

DARK CHOCOLATE FUDGE FROSTING

450 gm dark pure chocolate,melted

6 tbsp cocoa

9 tbsp warm water

1 1/2 cup butter,room temperature

1 cup icing sugar,sieved

1 1/2 tsp vanilla extract/orange extract

1 tbsp dark caramel or molasses

Method:

Make a smooth paste with cocoa and warm water,make sure there are no lumps.In a bowl blend cooled chocolate,cocoa paste,icing sugar and butter till  fluffy.Add vanilla or orange extract and caramel color.Blend till smooth.Use to frost or layer cake as desired.
